Fluffy Pancakes

Ingredients
- 1½ cups all-purpose flour
- 3½ teaspoons baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- 1¼ cups milk
- 1 large egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Add flour, baking powder, sugar and salt to a large mixing bowl. Mix the dry ingredients together.
- In another bowl, whisk the milk, egg, melted butter and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix the batter.
- Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or oil.
- Pour approximately ¼ cup batter onto the hot pan for each pancake.
- Cook until bubbles appear on the surface and the edges look set, approximately two minutes.
- Flip the pancake and cook the other side for one to two minutes, until golden brown.
- Serve warm with maple syrup, fruit, honey or your favorite topping.
