Grilled Chicken Salad
Make a fresh and filling grilled chicken salad with juicy seasoned chicken, crisp vegetables and a simple homemade dressing. It is ideal for lunch, dinner or meal preparation.
Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups chopped lettuce or mixed greens
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ½ red onion, thinly sliced
- ½ bell pepper, sliced
- ¼ cup shredded carrots
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
For the Dressing
- 3 tablespoons olive oil
- 1½ tablespoons lemon juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- ¼ teaspoon black pepper
- Salt to taste
Instructions
- Pat the chicken breasts dry with a paper towel.
- Rub the chicken with olive oil, garlic powder, paprika, salt and black pepper.
- Heat a grill pan or frying pan over medium-high heat.
- Cook the chicken for approximately six to seven minutes on each side, or until completely cooked.
- Remove the chicken from the pan and let it rest for five minutes.
- Add lettuce, tomatoes, cucumber, onion, bell pepper and carrots to a large salad bowl.
- Whisk olive oil, lemon juice, honey, mustard, salt and pepper in a small bowl.
- Slice the rested chicken into strips and place it over the salad.
- Pour the dressing over the salad and toss gently before serving.
