Grilled Chicken Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chopped lettuce or mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ½ red onion, thinly sliced
  • ½ bell pepper, sliced
  • ¼ cup shredded carrots
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt

For the Dressing

  • 3 tablespoons olive oil
  • 1½ tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon black pepper
  • Salt to taste

Instructions

  1. Pat the chicken breasts dry with a paper towel.
  2. Rub the chicken with olive oil, garlic powder, paprika, salt and black pepper.
  3. Heat a grill pan or frying pan over medium-high heat.
  4. Cook the chicken for approximately six to seven minutes on each side, or until completely cooked.
  5. Remove the chicken from the pan and let it rest for five minutes.
  6. Add lettuce, tomatoes, cucumber, onion, bell pepper and carrots to a large salad bowl.
  7. Whisk olive oil, lemon juice, honey, mustard, salt and pepper in a small bowl.
  8. Slice the rested chicken into strips and place it over the salad.
  9. Pour the dressing over the salad and toss gently before serving.
